Bottom Fermentation   (See “Yeast”.) Bottom-fermented beers include pilsners, bock beers, lagers, light beers and full beers among others.

Bottle Fermentation   The usual way fermentation takes place in the production of wheat beer. The process is caused by the yeast tat is contained in the bottle.

Bottle Beer   Two thirds of the beer sold in Austria comes in bottles or cans.

Barrel Beer   A third of beer sales in Austria come, "from the barrel".

Barley   Barley is one of the raw ingredients of beer. Barley must first be converted into water-soluble sugar. This conversion takes place via germinating the barley grains, which is then stopped by the heating process in a kiln. The result is malt.
